Liquid Egg X Vitamix easy vegetable omelette

An easy, quick and delicious way to make fluffy, light omelettes. Add a filling of your choice – grated cheese, ham, fresh herbs, smoked salmon or mushrooms. A big thank you to Vitamix for their simple to use recipe!

190 ml Clarence Court Just Whole Egg (3 Clarence Court eggs)
Salt
Pepper
1 tablespoon sunflower oil
½ yellow pepper, finely chopped
½ red pepper, finely chopped
½ courgette, finely chopped
1 tsp butter
25g cheese, grated

First heat the oil in a non-stick frying pan on a medium heat and add the chopped vegetables. Cook them for about 5 minutes or until softened. Once cooked, place these aside and reduce the heat to low in preparation for the omelette.
Pour the eggs into the Vitamix container and season well with salt and pepper. Secure the lid and select Variable 1.
Now turn the machine on and slowly increase to Variable 5. Blend for 20 seconds or until the mixture is light and fluffy.
Place the butter into the prepared frying pan and pour in the egg mixture. Tilt the pan slightly from one side to another to allow the eggs to cover the surface of the pan completely. Cook for 1 minute or until the egg begins to set.
Place the cooked vegetables and cheese on one half of the omelette and season well.
Fold the omelette in half and cook for another minute, then remove the omelette from heat. Serve immediately and enjoy!
