A fun way to serve a fried egg nestled in a piece of fried sourdough bread. Great on its own with a little seasoning or topped with crispy fried bacon as a little treat.

Clarence Court eggs
Sourdough bread
Extra virgin olive oil
Salt and pepper

Using a cookie cutter or small glass, cut a hole into one end of the slice of bread.
Place a medium sized frying pan on a medium heat. Rub the bread all over with extra virgin olive oil and fry the bread on one size until golden. Flip over the bread and crack the egg into the hole. Place a lid on the frying pan cook on a medium/low heat for around 2 / 3 minutes or until the egg is cooked to your liking.
Serve simply with a sprinkling of salt and pepper.
