Easy Flourless Pancakes

Take it back to basics with these two-ingredient, flourless pancakes topped with fresh blueberries and maple syrup.

One ripe banana
1 Clarence Court Duck Egg
1 teaspoon butter
Maple Syrup
Handful of blueberries


First, peel the banana and mash in a bowl.

Add the egg and whisk until smooth.

Delicately pour in small batches into a frying pan with hot butter.

Cook until golden on both sides, flipping for even cooking.

Stack and serve with a handful of chopped blueberries and a drizzle of maple syrup.
