Big Bird's egg is top of the pecking order

Eggs at Waitrose have gone supersize this spring. From the beginning of April, the supermarket will be exclusively stocking Clarence Court Ostrich Eggs from birds farmed in the UK.

Weighing in at nearly two kilogrammes, an ostrich egg is roughly equivalent to twenty-four large hens eggs and can take up to two hours to hard boil.

Ostrich eggs have a distinctive, light flavour and texture, making them ideal for cooking. For the culinary-minded, that’s almost one hundred meringues or thirty-two soufflés!

Waitrose Egg Buyer, Frances Westerman, says “The ostrich egg is a real show-stopper, not just in terms of looks but also taste. Our customers like experimenting with new foodie ideas. We’ve seen growing popularity of duck, pheasant and goose eggs. Now it’s the turn of the ostrich to take off.

“If ostrich eggs do take off, Delia Smith may have to make some drastic revisions to her popular guide ‘How to boil an egg’!”

Clarence Court Director Lisa Rowe adds, “We always look to innovate within our range and are delighted to be able to offer Waitrose customers such an extraordinary egg. The largest egg of any bird species, this product promises to be talking point at very large breakfast tables across the country.”

Yet as a seasonal product, shoppers had better not spend too much time with their head in the sand, as the eggs will only be available in selected Waitrose stores during the ostrich laying season of mid-April to August.
