In recent years it seems that the nation has been conditioned to buy eggs on size and price alone - but what about the egg content?
When looking at the eggs of wild birds, wild fowl and game birds it becomes apparent that a strong shell, rich yolk and denser albumen come naturally.
Research has confirmed that the yolk colour is a direct result of xanthophylls and carotenoid pigments that are obtained from the plant materials such as herbs and grass, that are eaten by birds who spend most of their time outside. So with hens, the quality and variety of the food source has a direct bearing on the quality of the egg.
Old breeds have more stamina, a stronger muscular frame, and are renowned for ranging further than ordinary hens. Consequently, our hens spend more time outside in amongst the foliage. No wonder our eggs have richer, larger than average yolks, a denser texture and a fantastic flavour.
Furthermore, old breed hens lay fewer eggs per year compared with that of a modern hybrid. Once again this contributes to the excellent rich flavour noticeable in all our eggs as the hens are able to take their time in producing eggs with superior content and real taste. We believe in quality rather than quantity and as for our hens, the production of eggs is a pleasure rather than a burden.
